A Very Good Morning

I am a huge fan of breakfast. Morning? Night? I’m totally down. So when a friend suggested this scrumptious little treat as a morning meal in Disney over spring break, I was all for it. I have since found about twenty new breakfast recipes I want to try, and I’m here to share a few of them with you : )

Chocolate-Orange Cupcakes

I love chocolate. Absolutely adore. But in these hot summer months, it seems wrong to be eating a chocolate cake for dessert instead of a key-lime pie. So when I stumbled over this recipe for a Chocolate-Orange cupcake, I went for it!

This recipe’s suggestion for frosting did not work out well. So I substituted a simple vanilla butter cream frosting with a bit of fresh orange juice and grated orange peel.


Whole Wheat Banana Pancakes

So in honor of being in my own kitchen with a stove and cooking utensils, I decided to make myself a delicious breakfast (well, brunch). I basically took a classic pancakes recipe and altered it to make it a little more healthy and a lot more delicious. Here’s what you’ll need:

  • 1 large overripe banana
  • 1 egg
  • 1/2 cup skim milk
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp nutmeg
  • 1/2 tsp cinnamon
  • 3/4 cup whole wheat flour


First, mash the banana really well. This is why it’s better if its a little overripe. Then add the other wet ingredients (skim milk, egg). Wisp well. Mix the dry ingredients in a separate bowl. Then mix the dry ingredients in slowly. Use a large skillet (with a little big of an olive oil coating) to cook them in. And tada! A delicious and nutritious breakfast : )


Hint: For a little extra sweetness, sprinkle some chocolate chips on top while they’re cooking (before you flip it). Yum!
